Apple crisp can be motivating, although it's not bread. I don't pare apples; you can just cut off-center 4 times.
Would the baker like to try homemade polenta? It's super easy, and slices a bit like bread when done. Slices can be in stir fry or Italian meals. If you've got corn meal (grits), that's just about all it requires. It pretty much makes itself. It's so good (I think), that I deliberately make it bland and seasonless so that I won't eat too much. You can always add sauce/butter, or fry it later anyway.
