My mom grew up during the depression years. Mom had a fond childhood memory. Roasting a potatoes on an open fire. My mom lived in the city. She would buy one potato, find a stick, make a fire in an open lot and roast her potato. She said it was delicious. Her second favorite treat was buying one pickle.

Yaki-imo, baked sweet potatoes (often purple), are popular in Japan. Personally, the smell made me feel nauseous... 😢

They have farms in Japan? I thought you had to go to Korea for a potato ::).

There was a guy at a place I used to work at who brought in a big kettle full of hard resin that he proceeded to warm up.  By lunchtime the stuff was boiling hot and he wrapped individual potatoes in newspapers and cooked them in the resin.  When finished, you put the potato by your plate and peeled off the newspaper.  It left a wonderfully fluffy, totally cooked potato on the plate.  Those things tasted great and I ate a number of them despite the fact that there were burgers and sausage dogs that were also on hand.  I guess the Indians used to cook them that way, though without the newspapers, I imagine.

Thanks for reminding me about the fluffy potatoes. My mom noted that the baking a potato on a stick was a great treat. Extra delicious and very fluffy.
