Does gluten free mean wheat free? @GravitySucks
@JUAN yep. The GF can’t eat gluten. She really misses a good bread to have for a treat once in awhile. A friend of mine made a loaf of “no knead†bread last September when I was visiting in Land O Lakes. I’ve been trying to simulate her results using various gluten free ingredients. This is a list of the ingredients in the flour I used:
Sweet brown rice flour
Brown rice flour
Tapioca starch
Arrowroot powder
Sorghum flour
Xanthan gum
In addition to that I added in some corn flour and corn meal. This is the best loaf I’ve baked so far but it is still a tad too dense for my tastes but she likes it.
My friend’s recipe didn’t have any sugar in it so I figured that’s why mine weren’t rising. Sugar by itself didn’t seem to help much. Since she was using self rising flour, I added some baking powder into this batch. That seems to have helped quite a bit.
I’ve used a different type of gluten free flour before. I’m pretty sure it was cassava. That turned out ok too.
