I know. It actually sounds sickening to think about it. I'm doing a sushi platter tomorrow and this will be on my mind. Sashimi and cheese.. graaghhck
They do try though. In Western China the Muslims made lumps of cheese from sheep milk. Not exactly sliced for sandwiches. Which was fine because there wasn't any bread either. (This was all a long time ago). in Tibet it was yak, in India it was water buffalo, in Mongolia horse. They were all a little rough, no one would confuse them with European cheeses at all (although the Europeans do make cheeses from mare's milk, etc, too).
It's been a long way from growing up in Eastern Washington State, where the cheese was either Velveeta or those nasty orange blocks of cheddar from Safeway. I thought I didn't like cheese until I moved to Berkeley and a friend brought cheeses home from her job at The Cheese Board to try. What an eye opener.
