@KSM  Nuthin' but luv for ya man, BUT, since you asked for an opinion...

I don't think you beat the eggs enough.  Maybe it's the photo but I see some globs of white in there.  The omelet looks like rubber.  What is that stuff on it?  Is it seasoning, or grit from the pan?  Hashbrowns look to be unseasoned and cooked unevenly.

BTW...2 eggs are fine but 3 eggs are preferable. 

I'd eat it though. 

Hehehehe   you know I love ya..  perhaps the light in my kitchen was not in my favor that morning. I had also just shoveled snow so perhaps some got into the egg mixture..  that would explain the white. Or the bad light and snow..   @ShayP

Does a scramble count as an omelet? I'll eat scrambles all day long. Feta and asparagus or broccoli.

@PolkaDot  Feta and asparagus are very nice together; especially with some red onion.  Whether in a scramble or an omelet.
