@ShayP The ham is from a local guy. I don't know what he does but he may have sold his soul to the devil for the ultimate ham flavor smoke thingy tasty wasty

@KSM  Oh I feel ya man.  Here in Virginia, ham is pretty popular.  I've had some at some of the local fairs and such.  Years ago I had some from a guy who raised hogs in one of the outlying counties and it was soooooo good.  Had a smoky brown sugar flavor with just enough saltiness.  He passed away right before the niche market of local foods really took off.  It's a shame too.  :(

@KSM  Nuthin' but luv for ya man, BUT, since you asked for an opinion...

I don't think you beat the eggs enough.  Maybe it's the photo but I see some globs of white in there.  The omelet looks like rubber.  What is that stuff on it?  Is it seasoning, or grit from the pan?...maybe browned butter?  Hashbrowns look to be unseasoned and cooked unevenly.

BTW...2 eggs are fine but 3 eggs are preferable.  ;)

I'd eat it though.  :D

If you’re going to dirty a pan, at least use 4 eggs.
Are we having fun yet?

@KSM  Jeez!  I'd love to have you someday get down here and sit with me and my buddy at a bar, restaurant, tavern, or whatever.   Then you two could sit across from me at the table and discuss the nuances of craft beers like those wine snobs do.  I would just sit there in wonderment as I drink my watered down domestic, or a real nice European beer.

Oh I love some Euro beer! I don't want the heavy stuff all night and usually space beer out with gin and water or a Scotch.  Name the bar tavern, or whatever! ;D
