When I worked on a tuna boat out of Honolulu, the Hawaiians would take the flying fish off the deck that had stranded themselves, gut them and flay them. Then salt them and put them in the sun to dry. Delicious fish jerky. I also became more accustomed to eating sashimi when we pulled aboard a tuna that had been gnawed upon by sharks while it was hanging on the hook. The cook would cut away all the meat that was gnawed on, cut the rest into cubes and then marinate them in soy sauce and a little bit of ginger. It was good for the crew because that was less money taken out of their crew share for food expenses.
