I never did either.  For one thing, it's not the same as working in a privately owned bar/restaurant.  And in a "small town" (Cortland, NY was not really small) your reputation as a dependable worker is pure gold.  They may take advantage of you, but you won't go hungry and you get respect.  And the other service workers in town will take care of you.  But it doesn't last forever.
