I just wanted to check in and scan the threads quickly then hit the hay.  However @KSM created a special thread, and I got caught up in it.  Do you see how much traction it gained in a short period of time!?  Damn!   :o

I must rest now for the dawn will bring a new light that shines on me with new opportunity.  After I awaken, and before I thrust myself into daily life...I'm going to have an omelet.   :D  I am not kidding either.  ;)

No matter what you say @GravitySucks @juan the best omelet is a TWO (that's 2!) egger. Two large eggs to perfectly coat the bottom of most skillets. We'll start there. Anybody else got an opinion? Let's go!

Pictured is my divine ham n cheddar from Tuesday morning.

Absolutely 2 eggs, extra large Rhode Island (brown) eggs are the best.  Rich milk, diced Ortega chilies, carmelized chopped onions, Colby/Longhorn cheese, a dash of Kosher salt, and a pinch of baking powder for body.  Coat the pan with a thin film of extra virgin olive oil or real butter, heat till it just begins to slightly smoke, pour in the mix and immediately rotate the pan over the flame till it solidifies just enough to fold and flip.  Continue to rotate pan till the bottom side is a light to medium brown.

If you’re going to dirty a pan, at least use 4 eggs.

My Dad had a hunting buddy he went to visit in Vermont one winter. After a wonderful breakfast cooked in cast iron pans the guy put the pans down for his hunting dogs to enjoy. Then he put them away. My Dad reminded him that he forgot to wash them, and his friend said "They're perfectly clean now" Many years later he still cringed.

I want to see pictures of not yet existing omelet! And BTW I use fine ground sea salt on my hashbrowns (((You can't see--salt!))) You say they look unseasoned but they're cooked in butter and a pinch of oil. Delicious! Fucking yummy, brudda ;D

I used to love breakfast.  It was my favorite meal.  First things I learned to cook as a child.  Now, I don't really like hardly any of it anymore:  no more eggs, bacon, sausage, pancakes, cantaloupe, French toast, hash browns, bagels, or cereal for me

Not sure what happened, maybe I finally just had too much of it - still up for donuts, waffles, and croissants though

Yeah, could be - still up for cold leftover pizza, or maybe a bit of jam out of the jar  :-X  Couple swigs of last night's beer, if I had one and if any is still left in the glass...
