Hi, K. I'm halfway there so I'll report to the thread, and since I'm not 100% Italian, I had to look it up. It appears that raviolis come in different shapes. Square of course, circular, triangular and even crescent moon shaped. My dear Uncle Joe now, he was a full blooded Italian. In fact, he was a chef in Spokane, Washington and his specialty was raviolis, manufactured right there at the restaurant. Sadly, I never got to sample his handiwork, but I did get to speak with a couple of waitresses who had traveled several hundred miles to attend his funeral. They told me how much they loved working with him and that the customers raved about his raviolis. Apparently, the customers would line up ahead of time and wait for the restaurant to open. Uncle Joe was something else and I wish that I had talked to him more often.
