If I had to guess, it would be the inability to store liquid in a vessel for long periods rather than absence of any raw materials.  The natives out here used baskets for water-carrying.

In the southwest, though, pottery was pretty advanced.  I wonder if anyone has tested them for beer residue.
It is strange since animal parts properly prepared etc could've been used for storage in addition to societies that had pottery. Even gourds and wood could be used. And being hunter/gatherers once would suspect they would "notice" animals acty strangely after eating some fermented fruit, certain mushrooms, etc or simply by being hungry and needing even themselves experience it. Certainly the weird way some natives "figured out" how to make a kind of alcoholic beverage (chewing crap and spitting and fermenting, etc) is harder than making simple "wine" from fruits? Or "beer" "wine" from rice etc? But maybe not domesticated enough? (But some tribes were fairly location based?)

Oh come on!  You're saying they didn't really use all the parts of the buffalo?

Well I think you'd need a sedentary society to develop rudimentary beer.  The various Mound Builders would qualify and were based on corn agriculture, but they were almost invariably located on rivers, so maybe it just didn't occur to them?

I think there is some nasty type of "beer" made from milk or cactus the various natives from Mexico and south made? But pre-European (not distilled as they do now.) But I figure the Finns would bring their own on their conquests. And Bill from Madison might agree. Not sure why our N.American Indians didn't brew stuff? I guess tobacco and/or weed was sufficient?

I find it suspicious and suspect a cover-up by them. Probably in some Smithsonian Warehouse/Masonic Temple there are crates of the best beer, wine, and distilled spirits ever made which was done by complex and exacting process by ancient Native Americans.....who also were giants.
